I love easy recipes. I love using my crock-pot. I love soups and stews. I love fall. I love eating soups and stews when the weather is cooler, like during the fall season. I would love to share with you my love of an easy, tasty, crock-pot, soup recipe: tortellini soup.

Just Too Easy Tortellini Soup |

Serves: 4
Ingredients
- 4 cups chicken broth
- 1 (9oz) package fresh refrigerated tortellini (any flavor: cheese, chicken, or mushroom)
- 1 (15 oz) can kidney beans or cannellini beans; drain
- 1 (15 oz) can diced tomatoes with Italian flavoring like garlic & basil
- 1 1/2 tsp. dried basil
- 2 T balsamic vinegar
- 1/3 cup shredded parmesan or asiago cheese
- 1 1/2 tsp. freshly ground black pepper
Instructions
- Bring broth to a boil in large pot. Add tortellini and cool 4 minutes. Stir in beans and tomatoes. Reduce heat and simmer 5 minutes. Remove from heat, stir in basil and balsamic vinegar.
- Ladle into bowls and top with a sprinkle of cheese and pepper.

I LOVE soup, but my family hates it! I will typically make a giant batch on Monday and eat it by myself for lunches through the week, this is going on the list of soups to make!!! Love it 🙂

The “Just Too Easy Tortellini Soup Recipe” is just FABULOUS!!!! I make a huge pot and have it for lunch everyday 🙂 …. I add Escarole or Spinach just before serving so it has a chance just to wilt a bit, this keeps in all those great nutrients and flavor. I’ve also used a pumpkin or squash tortellini in a lower sodium chicken broth or a home made veggie broth. lower cals and sodium intake because when you add the parm or romano cheese atop it adds just the right amt. of saltyness 🙂
